Advanced Vegan and Raw Living Food Chef Certification Course

Body Temple Gourmet Chef Certification is based on a high standard of excellence and is highly regarded around the globe.  Whether you are a professional 5 star chef looking to expand your skills and keep up with the changing tide of health conscious consumers or just want to get to the next level in your own, or your families, personal health, this course is designed to assist you in achieving a high level of kitchen competence.  We provide a supportive hands-on environment for students to learn about vegan and raw food preparation from basic to gourmet. This three month course develops confidence in chef skills and trust in your own personal pallet.  Upgrading your favorite recipes into healthy ones will be a snap after this course. This advanced certification also teaches students how to give effective culinary presentations and organize food preparation classes. Under the guidance of Mama Earth Cafe’ anyone with the desire can become a confident vegan and raw food chef as well as an awesome food preparation instructor!  After immersing in this course you can create a new career for yourself as a Private Chef, Restaurant Chef or Owner, Vegan and Raw Food Instructor, Spa or Retreat Chef, Event Caterer, and more!

3month course (1-3 days a week on site plus at home study) tuition: $4888 includes materials, ingredients at Body Temple Gourmet kitchen site and discount leads on kitchen equipment and supplies.   Budget a little extra for at home practice and personal small serving demonstrations and sharing in class (Shouldn’t be that much more than your regular food expenses since you will be eating what you practice and prepare at home).

What You Will Learn:
  • Healthy vegan and raw food preparation from basic to gourmet, with ample hands on experience
  • After completion of this course you will feel confident in catering yoga retreats, parties, events and mouth watering healthy dishes for your family and friends

  • How to use vegan and raw food kitchen equipment: dehydrator, spiralizer, vitamix, mandoline, juicers, food processor and other time saving devices
  • Consistent portioning for small groups as well as large groups

  • How to shop and choose the most delicious, health promoting fruits and vegetables
  • How to prepare delicious vegan and raw soups, sauces, salad dressings, Essene breads and crackers, gluten free biscuits and pancakes, pate's, dips, spreads, and herb butters, vegan milks, creams, and savory cheeses.  A variety of classic dishes gone raw including pasta, lasagna, burritos, sushi and a variety of desserts including cheesecakes, pies, cakes, puddings, chocolate confections, frostings, cookies, fruit sorbet, ice cream pies and more
  • Learn what ways to cook are healthiest and what ways, like frying in oil and dry baking, actually create carcinogens (cancer causing compounds) within the body

11 Week Course Agenda:

Week 1
-Get clear about why you are taking this course and what you would like to get out of it. 
-Overview of final written and oral exams to create ease and clarity for your Chef Certification study. 
-Introduction to culinary equipment used in a vegan and raw food kitchen (Dehydrator, Vitamix, Blender & Blender Cup, Mandoline, Slap Chop, Ceramic Knives ,Garlic Press, Lemon Juicer, Strainer, Nut Milk Bag, Double Boiler, Cutting Boards, Glass Jars for Storing Food, Food Processor, Spiralizer, etc).
-Introduction to staple ingredients used in a vegan and raw food kitchen: 
Superfoods: cacao, lucuma, maca, spirulina, acai, greener grasses, goji berries, others that you like.
Long shelf life ingredients: frozen berries, frozen bananas, maple syrup, dates, oats, walnuts, almonds, raw almond butter, quinoa, onions, garlic, ginger, turmeric, ume plum vinegar, nutritional yeast, nori sheets, tahini or other nut butters, olive oil, coconut oil, essential oils; edible therapeutic grade doTerra, stevia flavors, almond extract, sea salt, vanilla, coconut shreds, raisins, raw carob, basmati rice blend, french lentils, wheat berries, buckwheat, whole spelt flour, baking powder, kalamata olives, etc 

Staple foods that have a short shelf life: lemons, greens - hardy kales, dandelions and fresh lettuces, fresh herbs like cilantro, parsley, oregano, basil, mint etc, all kinds of fruits - lots!



-Field trip to Mana Foods.  How to shop and choose the most delicious, health promoting fruits and vegetables.  Be prepared to buy some staple ingredients for your at home practice.
-Homework; gather some of your favorite recipes and print them out - we will learn how to upgrade health in recipes at the next class.
-At Home Practice:
-Heaven will be available to go to each of your homes and set up your kitchen with you to enhance health and efficiency in food preparation (not required, just a bonus one on one offering to make transitioning to a healthy diet easier... Set Yourself Up For Success!)
-Weeks 1-4 homework - make your own packet of health benefit information of the vegan and raw foods we will be using throughout this class... You are welcome to use the main list of ingredients we will have in the class as well as add other foods you are interested in.


Week 2
Informative Talk:  How to upgrade favorite recipes to healthy vegan or raw ones. -Cooking techniques that reserve the most nutrients and keep disease away from you.  Essential techniques and short cuts for healthy living, nutrient bioavailability.
-Hands on practice at Body Temple Gourmet's kitchen:
How to prepare delicious dairy free milks, savory cheeses, salads, salad dressings (sprouted almond milk, sunflower milk, malted chocolate milk, cashew jalepeno cheese, pine nut ricotta, mozzarella, sprouted sunflower seed cheese, agar agar sliceable olive cheese, quinoa salad, massaged kale, asian cabbage, greek salad, avocado dressing, tahini miso dressing, tossed ume plum vinegar & garlic, ranch, and more).

-At Home Practice: 
Nut milks, cheese and salads- be prepared to demonstrate how to make one of your favorite salads with dressing, seed cheeses or nut milks at Body Temple Gourmet's kitchen next time class is together.  


Week 3
-Special Presentation or Informative documentary:  Manyfold Benefits of a Plant Based Diet and Lifestyle.
-Hands on practice at Body Temple Gourmet's kitchen:
How to prepare healthy elixirs (green smoothies, blackberry lemonade, spirulina acai lemonade, savory green drink, purple cabbage-orange-chia elixir, turmeric apple, delicious fresh healing juices, and more), delicious vegan and raw desserts (cheesecakes, pies, puddings, frostings, cookies, cacao cream pie, cacao cloud, berry cheesecakes, chocolate ambrosia, banana cream pie, chia seed ambrosia, key lime pie, chocolate pudding, avo cacao pudding, chia orange pineapple, chocolate chip cookies, cinnamon snikerdoodles, etc.), use of thickeners (agar agar, irish moss, cashews, avocado, coconut oil, etc.).
-At Home Practice:
Practice making healthy elixirs and raw desserts and be prepared to share tastes of and/or demonstrate one of your favorite elixirs or sweet treats when class meets again.


Week 4
Informative Talk:  The importance of food textures... chop, dice, mince, julienne, homogenize, mandoline etc. and knife techniques. Also, how to give effective food preparation presentations.
-Hands on practice at Body Temple Gourmet's kitchen:
Simple Entrees (mock tuna salad, collard burritos with cheese, raw angel hair pasta, vegan and raw pizzas, lasagna, mock chicken and more).  Sauces (pesto, marinara sauce, asian dressing, cashew gravy, sprouted almond hummus, carrot cashew pate’, pad thai spicy peanut sauce, etc).  Wraps and Rolls (nori rolls, spring rolls, green burritos, etc).
-At Home Practice:
Practice the techniques learned in class and be prepared to demonstrate one of your favorite dishes when class meets again.


Week 5
-Hands on practice at Body Temple Gourmet's kitchen:
How to prepare delicious probiotic rich foods (kim chee, sauerkraut, miso dressing, miso herb butter, yogurt, tempeh, cheeses and more). Quick healthy snacks; upgrade your popcorn, healthy caramel apple, crudités, and more.
-At Home Practice:
Practice the techniques learned in class; make your own probiotic rich foods at home and be prepared to share them with the class when we meet again.


Week 6
-Hands on practice at Body Temple Gourmet's kitchen:
How to prepare probiotic rich drinks (rejuvelac, kefir, kombucha mushroom tea, miso broth).  Basic counter top gardening, soaking, sprouting, simple jars with screen tops, lentils, almonds, alfalfa sprout mix, mung beans, adzuki, so many to choose from.  Outside gardening in trays - broccoli micro greens, sunflower sprouts, wheat and barley grass, etc.
-At Home Practice:
Practice the techniques learned in class; make your own probiotic rich foods and sprout at home and be prepared to share tastes of them with the class when we meet again.


Week 7
-Hands on practice at Body Temple Gourmet's kitchen:
How to prepare delicious and healthy raw breads and crackers (flax onion bread, almond flax thins, raw tortillas, raw soft veggie bread, raw nori crisps, kale chips, etc.)
-At Home Practice:
Practice the techniques learned in class and be prepared to demonstrate one of your favorite breads or crackers when class meets again.  If you don’t have a dehydrator, you may use the one in class.


Week 8
Informative Talk: Creative final presentation and garnishing with wild edibles and healing culinary herbs for an extra health boost.
-Hands on practice at Body Temple Gourmet's kitchen:
How to prepare delicious vegan and raw soups, and gluten free biscuits and pancakes, (rosemary onion olive pan bread, spelt pancakes, corn bread, cream of any kind of vegetable soup you want, kobucha squash soup, asian carrot coconut, etc.)
-At Home Practice:
Practice making soups and gluten free breads or pancakes.
Optional Practice: Find some organic wild edibles and flowers around your home and bring them in for identification.


Week 9
-Hands on practice at Mama Earth Cafe’ kitchen:
How to prepare delicious vegan and raw sweet treats including chocolate confections, fruit sorbet, ice cream, superfood bliss balls, Indian cardamom chocolate, raw chocolate, thin mints, maca cacao butter cups, superfood maca lucuma cookies, etc.
-At Home Practice:
Practice making your favorite raw desserts and be prepared to share tastes or demonstrate one of your favorite sweet treats when class meets again.


Week 10
Informative Talk:  Working from a certified kitchen, cleanliness guidelines, permits and licensing, insurance, website, marketing.
How to plan and organize vegan and raw food classes.
-Hands on practice at Body Temple Gourmet's kitchen:
One pot dinners (mexican rice with zucchini, one pot curry Dahl, quinoa dish with veggies, astragalus rice etc.) and opportunity to practice hands on with Heaven anything that you would like to get a better handle on.
-At Home Practice:
Practice one pot dinners and anything you feel you need to practice for the final culinary exam. 

Week 11
-Hands on practice at Body Temple Gourmet's kitchen:
Hands on experience in catering a professional event. 
Cater (hands on) an event with Brook and learn the ins and outs of portioning food for how many attend the event. 
-At Home Practice:
Write up a sample menu or three, that you feel you could actually prepare A-Z, for different catering opportunities... you will have a work sheet to guide you.
Homework study sheet to practice for the final written exam.

Graduation and Chef Certification! Yeay!
Final testing days (final consists of written test as well as preparation presentation in front of the class of a healthy delicious elixir, salad and main entree’, and dessert) you will be graded, one star for each category, on taste (flavor balance), freshness and quality of food, creative clean presentation of dishes, attitude and energy put into the food while preparing, organization and fluidity, extra points for using lots of local ingredients and making up your own delicious recipes).
Become part of the Body Temple Gourmet Certified Chef Referral Service program and have professional catering jobs referred directly to you. 
-At Home Practice:
Optional:  organize your very own food preparation class or catered event!...  I recommend setting up a paid food preparation class or catered event once every six months to give you on-going practice and to spread the health.

Certification may not go to everyone... you have to truly earn your Chef Certification through Body Temple Gourmet. Body Temple Gourmet holds a very high standard of quality and excellence in the kitchen and will only hand out certificates to those who have achieved a high standard of cleanliness and excellence in the kitchen.  If you do not receive your chef certification at first, you will have an opportunity to retake the test as well as plan and cater an event with Heaven’s supervision.  Only those who have achieved top quality excellence in food preparation, attitude, and organization skills will be able to take part in the chef referral service provided by Mama Earth Cafe’ (4.5 & 5 Star Chefs).
